Walnut Zucchini Lasagne...

My favorite entrée to make here is a wonderful lasagne.  Steve likes it because it is not a food item one finds often in Umbrian restaurants (interestingly, the term "lasagna" comes from the Greek word, "lasagnum," meaning dish or bowl. The ancient Greeks used baking dishes of that name, which they eventually transferred to the Romans).

2 medium zucchini thinly sliced
1 large carrot, thinly sliced or grated
3 1/2 cups marinara sauce (or meat sauce)
1/8 teaspoon pepper
1-1/2 cups shredded mozzarella cheese (I use a smoked cheese and Gouda)
(2) 1/2 cup fresh grated Parmesan cheese (save one 1/2 for last step)
Small container of ricotta
1 egg
No-boil lasagna noodles
1/2 to 1 cup chopped walnuts

  • Trim ends off zucchini and slice thinly zucchini, cross way.
  • In a small mixing bowl toss together the ricotta, mozzarella cheese and 1/2 c Parmesan cheese, pepper, walnuts and egg; set aside.
  • In a two quart baking dish cover bottom with thin layer of sauce then cover with noodles (not overlapping)
  • Spread with a 1/4 of the sauce.
  • Spread with 1/3 cheese mixture.
  • Spread the carrots.
  • Top with a 1/3 of the zucchini
  • Repeat layers ending with cheese mixture and remaining  sauce.
Bake, covered, in a 375ºF. oven for 40-50 minutes (until bubbly in center). Uncover and sprinkle with the remaining cheese mixture. Bake, uncovered, about 20 minutes more or until heated through. Let stand for 15 minutes before serving.

The beauty of this recipe is that, much like quiche, you can add a variety of ingredients.  I think the walnuts really make it amazing.

Sounds awesome! I got 7 zucchini plants in the Garden. Going to make this next. Yesterday, I stuffed them with Italian sausage, caramelized onions, sauteed mushrooms & garlic with parmesan cheese and used my home made tomato sauce. Yummy!
