Leaping in the Lentils...
Yellow, as most know, is my ultimate favorite color. There is almost a mood-altering drug quality in the brilliance of the hue. You can almost imagine my cries of "Steve stop the car!" when we came upon these fields of yet unknown to us, yellow flowers.
The lentils are sown in the spring. In July and August the plants are cut and dried in order to remove the seeds. Lentils here are quite different than other lentils: the climate and soil of Umbria produce a bean with a thin skin and soft consistency, allowing for them to be cooked without having to be soaked first.
It's wonderful to discover that one of my favorite things to eat is one of the most beautiful sights in the Umbrian countryside.
