We stayed and played in Spoleto...
We began with a hike above the town.  Today was another beautiful day, with the wildflowers beginning to appear.
The cemetery is incredibly unique and worthy of an explore. 
One of our favorite stops is a local frantoio for their wonderful Vino Rosso.  We discovered the Feliziani Family while on an olive oil tour.  They have been olive-oil producers since 1800 however, we are fans of their wine.

We knew dinner at our friend, Francesca's, would be an unforgettable experience for all of us but we had no idea hats would be required.  Way fun!  Nothing says, "I'm in Italy" like wild headwear at dinner!
Our entrée was questioned at first, but loved after first bite... savory chocolate pasta noodles, Speck, cream and nutmeg.  It was unique and delicious.  We all deemed the night one of our more memorable dinners in a very long time.

Oooh. Need to find out how to make that chocolate pasta. Haven't ever seen in store here. Jim makes homemade pasta if anyone there knows how to make from scratch. Give Nick a big hug if you see him tomorrow! He's going into Spoleto later in afternoon.

Chocolate Pasta is Amazing. To 300 grams A/P Flour add 30 grams unsweetened cocoa powder, 2 egg yokes +5 eggs..check for consistencey and roll out like regular pasta. Flour the pasta at stage 3 and 7 to keep from sticking to pasta rollers.

Three of the hats came from different Thailand hill tribe people near Chang Mai and the big wheel hat came from Mexico. It's a thing I got into when traveling to buy authentic dress attire. Then when I have dinner parties, I make the guest choose a hat and we wear them... Francesca

Chocolate pasta?! I have never heard of CHOCOLATE PASTA!! That sounds incredible.
