My Dance with Food Continues
Since I've begun monitoring my glucose levels, I've lost over 5 pounds. I know for most that's a good thing but I am one of those unique individuals who needs to gain weight (I am sorry for those who have the opposite problem).
As it turns out, the high caloric food I enjoy eating affects my glucose levels in a very negative way. Wanting some dietary help, I turned to a registered dietitian who informed me that eating FAT is actually something good for me, along with a long list of other suggestions. One of her highly recommended menu items iseggs. While making a crustless quiche (as my 5 year old granddaughter asked, "Is it really quiche if it doesn't have a crust?"), my eggs formed an encouraging sign which I just had to share. We'll see how this all goes over the next few weeks. I'm feeling hopeful.
